Dice Laura que supo que sería cocinera a los 13 años. Tardó unos cuantos más en empezar a desarrollar su magnífica labor entre fogones, pero valió la pena la espera.

Reconozco que la descubrí tarde. Concretamente el pasado año, compartimos barra en Madrid gracias a nuestros amigos comunes @rodatwetter y @ @nagore_irazuegi de @arima_basquegastronomy. Ese día ya ví en su mirada la viveza e inteligencia emocional de la que todo el mundo que la conoce, habla. Es bella por fuera y extraordinariamente inquieta y habilidosa en su trabajo. Su principal virtud. Prometí visitarla en Zahara, dónde su restaurante @trasteo_zahara es un must desde hace ya muchos años. Ella se ha convertido también en una persona muy a seguir de cerca por mí…Cumplí mi promesa. Por duplicado este verano.

@lauracamp0 es a Trasteo lo que Nago y Rodri a Arima. El alma, el corazón palpitante de una cocina que no se entiende sin conocer su origen, su destino y, sobretodo, su desarrollo.

Trasteo es su proyecto, su tercer hijo. Un local amable, abierto, diáfano y con esa clara sensación de que saldrás satisfecho.

La taberna ofrece lo que esperas: comida casera, de cuchara, marinera y con toques creativos que la propia Laura ofrece modestamente, elegantemente…

Aquí se come atún. Y boquerones. Ensaldas, fideuá, pulpo, salmorejo y hasta arroz. Nos sorprendió con uno, de un sabor deliciosamente potente, en nuestra primera visita. Otro amigo en común, Trifon @elfogondetrifon se lo había encargado por la mañana. Y lo bordó…

Las croquetas son cremosas, perfectas. El puerro al eneldo con almendras, alcaparras, mahonesa y sardina, un magnífico contraste entre el dulzor de la hortaliza y el salado del pescado. El pepito de vaca rubia en pan de cristal debería ser obligatorio en todos los almuerzos que se precien. Y los aperitivos, las meriendas…

Me gusta el atrevimiento de sus puntos picantes. El casticismo de su oreja, frita y crujiente. El olor a “domingo en casa” de sus macarrones y el color de su atún, marinado, cocinado o en cualquiera de sus formas.

Sus postres, todos caseros, con ese sorbete de albahaca verde y ácido y la lemon pie, perfecta en dulzor y contraste crujiente con su almendra troceada.

Los comensales disfrutan. Del ambiente, del lugar y de los paseos de Laura, que discurre entre la sala y la cocina con el pelo recogido y la sonrisa cómplice de quien ve disfrutar a los suyos. El placer es mútuo.

Laura says she knew she would be a chef when she was just 13. It took a few more years for her excellent cooking skills to begin to emerge, but it was worth the wait.

I’ll admit I was late to the party. Specifically, I met her last year at a Madrid bar with our mutual friends Rodrigo Garcia and Nagore Irazuegi from Arima Basque Gastronomy. That day I could already see the vivacity and emotional intelligence in her eyes that everyone who knows her speaks of. She is beautiful on the inside and extraordinarily restless and skillful in her work. It’s her biggest virtue. I promised to visit her in Zahara, where her restaurant Trasteo has been a must for many years now. I’ve also started to follow her closely, and I kept my promise. Twice this summer.

Laura (@lauracamp0) is to TrasteO what Nago and Rodri are to Arima. She is the soul and the beating heart of a cuisine that cannot be understood without knowing her origin, her destiny, and, above all, her development. TrasteO is her project, her third child. It’s a cheerful, open, and diaphanous space where you just know you’ll leave satisfied.

The tavern has everything you’d expect: homemade food, stews, seafood, and creative touches that Laura herself offers with modesty and elegance.

Tuna is a local specialty, as are fresh anchovies. They also serve salads, “fideuá” noodle paellas, octopus, “salmorejo”, and even rice dishes. We enjoyed one with a surprisingly powerful flavor on our first visit, which another mutual friend, Trifón (@elfogondetrifon), had ordered that morning. Brilliant!

The croquettes are creamy and perfect. The leeks with dill, almonds, capers, mayonnaise, and sardine present a fantastic contrast between the sweetness of the vegetable and the saltiness of the fish. The Rubia Gallega grilled meat sandwich on crystal bread should be mandatory for any self-respecting lunch… or afternoon snack or appetizer, for that matter.

I like the audacity of her spicy notes, the authenticity of her crispy fried pig’s ear, the “Sunday at home” aroma of her macaroni, and the color of her tuna, whether marinated, cooked, or in any of its variations.

Her desserts are all homemade, with that tart green basil sorbet and the lemon pie, perfectly sweet and crunchily contrasting with the chopped almonds.

It’s a fun place to eat: the atmosphere, the space, and Laura’s strolls through the dining room and the kitchen, with her hair tied back and the knowing smile of one watching people enjoy themselves. The pleasure is mutual.
