Julio, el chef, cambia los platos a menudo. Coctelería.

Mi amiga y referente gastronómico @patriciamateo siempre lo dice, @soykitchenmad es el mejor oriental de Madrid. Coincido absolutamente con ella. Julio, referente ya en los fogones de la capital conoce, indaga y revuelve la memoria colectiva que tenemos sobre la comida asiática, dándole siempre nuevas formas y trabajando sin parar en la revolución.

Creativo en cada plato, buscador incesable de sensaciones culinarias frente a sus creaciones, domina como nadie el wok de hierro que le caracteriza en sus fogones y le saca todo el partido del que es capaz.

Esta vez nos sorprende de nuevo. Con él, cuando crees que ya lo has probado todo, aún hay más. Me maravilla la deliciosa sopa agripicante con rabo de toro y boletos, con la que iniciamos nuestro menú, siempre diseñado por él en varios pases que convencen.

Tuétano al horno con pimienta de Sichuan, una gozada gastronómica que recuerdo ya de veces anteriores. Esta vez, acompañado del mejor pan chino que he probado jamás….pequeño, crujiente, sin toques grasientos, dulce y esponjoso a la vez….

El camarón al wok nos maravilla en su textura y presentación, sólo 15 segundos de pase por el fuego, ni uno más ni uno menos, tal y como nos cuenta el propio Julio.

El dim sum de txangurro precede al arroz frito que, según el chef, es de los platos más complicados de conseguir….Curioso, ¿verdad?. En su caso lo revuelve con bambú, pan choi, gambas y carne encurtida, una delicia.

Esta vez nos da la opción de probar el chilli crab, un plato que hay que comer con las manos, chupando, relamiendo y rebuscando su carne en la adictiva y jugosa salsa con la que Julio siempre lo acompaña….Picante y fresco en su punto perfecto, exacto.

Los cócteles, el excelente y amable servicio, los postres…todo acompaña en este precioso local con la cocina a la vista de la calle Zurbano, un remanso de creatividad y tradición a borbotones en un referente ya en la capital. Conocer a Julio @juliosoykitchen y poder charlar con él es, además, un privilegio….

My friend and culinary connoisseur Patricia Mateo (@patriciamateo) has always said that Soy Kitchen (@soykitchenmad) is the best Asian restaurant in Madrid. I couldn’t agree more. Julio, now a top name among the capital’s chefs, knows, explores and shakes up our collective memory of Asian food, constantly giving it new forms and working tirelessly toward the revolution.

Creative in every dish, this unstoppable seeker of culinary sensations exhibits an unrivaled mastery with the iron wok that defines his cooking, and he has a field day with it.

This time he surprised us again. Just when you think you’ve tried everything he has to offer, there’s still more to come. The delicious sweet and sour soup with oxtail and porcini mushrooms was a mind-blowing start to our menu, an impressive succession of courses always designed by the chef himself.

I remember the wonderful baked marrow with Sichuan pepper from previous meals. This time it came with the best Chinese steamed bread I’ve ever tried…small, crunchy, not greasy, sweet and spongy at the same time.

The prawn stir-fry amazed us with its texture and presentation, cooked for just 15 seconds, not a second more or less, as Julio himself tells it.

The spider crab dim sum precedes the fried rice which, according to the chef, is one of the hardest dishes to get right. Interesting, right? He stir-fries it with bamboo, bok choy, prawns and pickled meat, and it’s fantastic.

We decided to try the chilli crab, a dish you have to eat with your hands, slurping, licking your lips and burrowing out its meat in the addictive and juicy sauce Julio always serves it with. It’s spicy and fresh and cooked to absolute perfection.

The cocktails, the excellent friendly service, the desserts… it’s all working in this beautiful open-kitchen restaurant on Calle Zurbano. It’s a haven for bursting creativity and tradition in what is now a Madrid benchmark. And what a privilege it was to meet Julio and get the chance to chat with him.
