Salón íntimo, gran calidad de producto y cocción.

¡Qué delicia es comer! Y más en tiempos de pandemia… Llegada de Barcelona, dónde los restaurantes sólo abren 2 horas a mediodía para servir los almuerzos y ni rastro de un bar para tomar un tentempié a partir de las 17h de la tarde, Madrid se erige como un oasis gastronómico y de ocio digno de estudio. Más libertad, menos casos de Covid… Pero esta discusión no puede enturbiar los comentarios de este excelente restaurante…

@tasquita es un lugar de visita obligada, de culto, de tradición y de “casa”. Juanjo nos recibe, una vez más, con la sencillez de la cocina de producto, bien hecha, de tradición y con sus maravillosos toques de creatividad. La ensaladilla rusa es de llorar, ligera, cremosa y ligada magistralmente. Las quisquillas marinadas o en escabeche nos permiten disfrutar con los dedos de su jugosa textura. Le sigue el salpicón de langostino de Sanlúcar, en una vinagreta lograda con el jugo de sus cabezas y mahonesa deliciosa. Un trinxat con botifarra hecha en casa y trufa, unos pulpitos escalados en tamaño pero no en sabor, explosión de mar y jugo y una cigarra real (también llamada previa de langosta) a la plancha que enamora con su textura y carnosidad. La ventresca de atún, crujiente, con su pertinente capa de grasa y que se deshace en la boca finaliza una comida tan sencilla y aparentemente fácil como completa y convincente. ¡Ah! y las albóndigas… esas albóndigas de Juanjo, que no puedo más que deshacer para mezclar con esas pequeñas patatas fritas y el jugo de la cocción… ¡qué maravilla!

La tasquita de enfrente sigue apeteciendo siempre. Es garantía de calidad, de saber hacer, de convicción, de tradición y de mucho cariño… Juanjo confiesa seguir apasionado por su trabajo, por el día a día y por, pese a las circunstancias, seguir siendo uno de los grandes clásicos de Madrid…

How delightful it is to eat! And even more so during a pandemic. Coming from Barcelona, where the restaurants are only open for two hours at midday for lunch and there’s no whiff of a bar to have an afternoon snack after 5 p.m., Madrid stands as a culinary and entertainment oasis worth pursuing. More freedom, fewer cases of Covid… But we mustn’t allow this discussion to overshadow our comments about this excellent restaurant …

La Tasquita is a must visit, with a cult following, in the old-school homestyle tradition. Juanjo welcomes us, once again, with the simplicity of product-based cuisine, done well, traditional but with wonderful creative touches. The Russian salad is exquisite, light, creamy and masterfully thickened. The succulent marinated or pickled shrimp are finger-licking good. These are followed by the Sanlúcar langoustine cocktail in a vinaigrette made from the juice of their heads and delicious mayonnaise. There’s the trinxat cabbage and potato cake with homemade botifarra sausage and truffle, the baby octopi that scale up in size but not in flavor for an explosion of sea and brine, and the grilled Mediterranean slipper lobster that enchants you with its texture and meatiness. The crunchy tuna belly with its due layer of fat that melts in your mouth completes a meal that is as simple and apparently easy as it is complete and convincing. Oh! And the meatballs… those meatballs of Juanjo’s, that I can’t help but break up and mix into those tiny fried potatoes and jus… What a treat!

The little tavern across the street never fails to draw us in. It is a guarantee of quality, of know-how, of conviction, of tradition and of great care. Juanjo says he remains passionate about his work, about the day-to-day of it, and despite the circumstances, about continuing to be one of Madrid’s great classics.
