At this point it should be clear that one of the most important things to take into account for a good feast are the raw products. And this, without a doubt, is one of the reference points in Madrid for having the finest seasonal products prepared with the mastery of chef Juanjo López, who took over the reigns of this family business, turning it into what is now one of the most emblematic restaurants in the Madrid city center.
Intimate dining room, excellent quality of products and cooking
Already seated around one of the tables in his small dining room, he recommends we try the crunchy and sweet “tear” peas, the flavorful fried ortiguillas(snakelocks anemone), the lightly grilled squid, and a healthy portion of truffle served in what in my opinion is the very best company: a fried egg. The service is meticulous and the cooking perfect for this feast, which turns into a gem, sprinkled with his interesting comments about, for example, how to prepare the delicious sole a la meunièrethat he offers us – in his case without pine nuts – or one of the small and lesser known bistros in France that we must visit if we go to Paris, an upcoming trip… A restaurant where one can enjoy the good food and good service, and which should be visited in a leisurely manner, leaving yourself plenty of time to get lost in the exquisite flavors of the finest products, perfectly prepared, and without complications. It sounds easy but, more often than not, simplicity is often the hardest thing to come by.
