LA CANDELA RESTÓ, Madrid. Cada vez resulta más complicado comer y divertirse. Descubrir un sitio y hacerle un hueco en tu memoria para recomendarlo o repetir. Combinar un buen descubrimiento con una propuesta gastronómica completa. Esta ocasión cumplió todos los requisitos. Acudimos con altas expectativas. Cada vez se habla más de La Candela (precioso y emotivo nombre que llevamos grabado a fuego en nuestra esencia)… Los hay que opinan que es lo último en cocina salvaje (con respeto por esas afirmaciones, sigo pensando que no hay nada más salvaje, radical y diferente que la cocina de Dabiz Muñoz en Diverxo y Streetxo).

Otras opiniones aseguran que el no tener carta y cambiar casi semanalmente los 3 menús degustación (corto, medio y largo) lo convierten en un local de producto e innovación absolutamente rompedor… Lo que sí es unánime es que La Candela Resto se ha ganado a pulso el ser uno de los últimos hits en la gastronomía de la capital. Pese a que lleva 4 años en activo, el cambio de ubicacíon del local (el barrio de los Austrias, cerca de Ópera) y la estrella Michelín conseguida el pasado mes de noviembre lo han consagrado.

Nos decantamos por el menú medio, con 16 pases en el servicio. Ya desde el inicio comienza el viaje. Además de por las alergias o intolerancias preguntan por el punto de picante al gusto. Prometen diversión… El viaje se inicia. Influencias orientales, marroquíes, thai, mexicanas, mediterráneas… El servicio es esmerado, la vajilla original (con discos-platos de Manolo Escobar y Julio Iglesias incluidos) y la comida buena. Muy buena. El rollito vietnamita con cocido madrileño es la máxima expresión de la fusión internacional que el chef Samy Ali propone. Será el toque picante en sus platos, sus apenas 10 mesas, su cocina a la vista o la capacidad de sorprender, pero La Candela restó es una magnífica propuesta para descubrir nuevas tendencias en el panorama gastronómico actual, conocer las apuestas más arriesgadas de los nuevos chefs del momento y salir plenamente satisfecho con la sensación de haber participado de una aventura que dará mucho que hablar…

To combine a good discovery with a complete gastronomic offering. This time, all the boxes were checked. Our expectations were high when we went. We had heard more and more about La Candela (a beautiful and evocative name that is burned into our souls)…

There are those who think that it’s the wildest cuisine out there (respectfully, I still think that there’s nothing wilder, more radical and more different than Dabiz Muñoz’s cuisine at DiverXO and StreetXO). Others claim that the fact that there’s no set menu and the 3 tasting menus (short, medium and long) change virtually every week, make it a temple to product and absolutely groundbreaking innovation. What everyone agrees upon unanimously, however, is that @lacandelaresto has worked hard to become one of the latest gastronomic hits in the Spanish capital. Although it has been open for 4 years, the change in location (to the Austrias neighborhood, close to Opera) and the Michelin Star (obtained last November) have confirmed this.

We opt for the medium-sized menu, comprised of 16 courses, and the journey begins from the start. In addition to asking about any allergies, they want to know how spicy we like our food. The promise of fun… The journey begins. Influences from Oriental, Moroccan, Thai, Mexican and Mediterranean cuisine… The service is meticulous, the tableware original (including record-plates from Manolo Escobar and Julio Iglesias) and the food good. Very good.

The Vietnamese spring roll with cocido madrileño is the maximum expression of the international fusion that chef Samy Ali proposes. Maybe it’s the spicy touch in his dishes, the barely ten tables, the open kitchen, or his ability to surprise, but La Candela Restó is a fantastic place to discover new trends on the current gastronomic scene, to get a glimpse of the riskiest bets of today’s new chefs, and to walk out completely satisfied with the sensation of having taken part in an adventure that will leave plenty to talk about…
