Haber compartido fogones como stager en el Celler de Can Roca puede ser una buena carta de presentación. Pero, sin duda, la mejor garantía de buena cocina en su casa es su trabajo y la pasión que pone a lo que hace. Victor Pardo dirige y regenta La Bonaigua, un pequeño restaurante en la población de Sant Just Desvern que combina la cocina tradicional y llena de sabores y recuerdos con la técnica más vanguardista de su joven chef.

Buenos arroces y pescados

Con menú diario y de fines de semana el restaurante se erige como uno de los centros de obligada visita en la pequeña localidad anexa a Barcelona. En los fogones, como a diario desde 1990, la madre de Victor, Sonia, cocina junto a su hijo platos tan exquisitos e imprescindibles como los caracoles, uno de los referentes del local (en cualquiera de sus variedades, a la llauna, a la yaya, a las hierbas…), el bacalao (otro de sus fuertes), los arroces o el atún.

En este caso nos sorprende y deleita también con un potaje de judías excepcional, pedimos las bravas (obligado probarlas, de la variedad agria con el acabado de romero ahumado, y nos emocionamos con el arroz y el wagyu, delicadamente pasado por la plancha y acompañado de unas chips alegremente tocadas con lima. Postres a la altura y servicio esmerado y atento que convierten al lugar en un centro neurálgico de la gastronomía del Baix Llobregat. ¡Bravo Victor por el buen trabajo, la constancia y seguir con una tradición familiar digna de ser mantenida en el tiempo!


Having worked as a stager in Celler de Can Roca can be a good calling card. But there’s no doubt that the best guarantee of good cooking at this restaurant is the hard work and passion put into it. Victor Pardo manages and runs La Bonaigua, a small restaurant in the town of Sant Just Desvern that combines traditional cuisine full of flavour and memories with the vanguard technique of its young chef.

Good rice and fish dishes

With a prix fixe menu on weekdays and weekends, the restaurant has become a must-visit in this small Barcelona town. In the kitchen you’ll find Victor’s mother Sonia at the same station she has worked every day since 1990 alongside her son, cooking exquisite and essential dishes like snails, one of the house specialties (in many variations, including a la llaunawith a spicy sauce, a la yayacooked with peppers and meat, with herbs, etc.), cod (another speciality), rice dishes and tuna.

This time we were pleasantly surprised by an exceptional bean stew, the bravasfried potatoes (a must-try, sour and finished with smoked rosemary), and we were thrilled by the rice and Wagyu beef, delicately seared and served with chips with a nice touch of lime. The equally great desserts and the careful attentive service make this place a nerve centre of Baix Llobregat gastronomy. Bravo Victor for the good work, consistency and keeping up a family tradition worthy of standing the test of time!
