Escogemos Abac para una celebración muy especial, única. No nos equivocamos. Nos sugieren el Menú Tradición que se inicia en la cocina con algunos refrescantes y sugerentes aperitivos como el cactus de lima, tequila y hojas verdes, el gran macarrón de pan crujiente con sofrito de tomate especiado y albahaca (espectacular) o el chip de cecina con mantequilla Café de París… Una visita a la cocina que se agradece como paso previo al salón.
El mejor Bloody Mary que me he tomado en la vida abre un sinfín de sensaciones gustativas que alcanzan sus puntos álgidos (en mi opinión) con platos como el tomate de invierno (delicioso en diferentes texturas), el pan de queso Comté con mantequilla de trufa blanca (inolvidable), la gamba servida en diferentes pases (interesante e intensa), la caja china (momento oriental que tanto agradezco en los menús) o el vistoso trampantojo de la vela (que no desvelaré pero que sorprende y conquista). La escudella de col culmina en presentación, gusto, sabor y evolución un plato que, para mí, es ya un imprescindible en el menú de invierno de Abac (¡por favor, no lo retireis nunca!). El menú finaliza en su parte salada con la infusión de quesos y verduras (con reminiscencias a aquellas inolvidables esferas de queso de Mugaritz de hace unos años)…
Postres a la altura y servicio y atención, como siempre, de 10. Abac no parece tener límite. Su tercera estrella ha consolidado a su chef, su equipo y el talento y amabilidad de @cristina0701197 (¡gracias por convertir nuestra celebración en algo tan especial!). Y no se le puede negar trabajo, constancia, elegancia, delicadeza, técnica y evolución. Una combinación que sólo puede resultar exitosa. Uno de los nombres en mayúsculas de Barcelona y en el país.
ABAC is one of the must-visit restaurants in Barcelona. Its chef, Jordi Cruz is at his very best right now. Truthfully, the fact that one of the best culinary talents in Spain has such a strong media presence has been frequently used against him, as something negative… This would only make sense if, when seated at a table in his restaurant, the quality, service or the consistency of his dishes, reflected that in any way.
A visit to Abac, however, confirms the exact opposite. Therefore, I would recommend that all detractors and critics of this media darling — but also three-Michelin-starred chef — first experience eating lunch or dinner at Abac… and then write about it.
We chose Abac for a very special, unique celebration, and we weren’t wrong. They suggested we try the Menú Tradición, which starts in the kitchen with some refreshing and suggestive appetizers like the Cactus of lime, tequila and green leaves; the Caramelized bread macaron with spicy tomato sauce and basil (spectacular); and the Cecina chip with Café de Paris butter… It is a visit to the kitchen that is much appreciated as a precursor to the dining room.

The best Bloody Mary that I’ve ever had leads to an endless surge of taste sensations that reach their crucial point (in my opinion) with dishes like the winter tomato (delicious in different textures), the Comté cheese bread with white truffle butter (unforgettable), the shrimp served different ways (interesting and intense), the Chinese box (the Asian influence that I enjoy so much on menus), and the stunning candle trick (which I won’t reveal, but which surprises and wins you over). The kale “escudella” culminates in terms of presentation, pleasure, flavor and evolution, and for me is an obligatory dish on Abac’s winter menu (please! never take it off!). The savory portion of the menu finishes up with the infusion of cheeses and vegetables (with shades of those unforgettable cheese spheres from Mugaritz a few years ago)…
The desserts are equally good, and the service and attention are, as always, a 10. Abac doesn’t seem to have any limits. Its third star rewards the chef, his team and the talent and friendliness of @cristina0701197 (thank you for making our celebration so special!). And hard work, consistency, elegance, delicacy, technique and evolution must be recognized — a combination that can only result in success. One of the top names in Barcelona and the country.
