En la parte de abajo del restaurante sigue la noche con la coctelería La Tremenda, de copas y tardeo.

Como manda la tradición veraniega, nos gusta recorrer y descubrir los nuevos lugares y restaurantes de la zona dónde veraneamos. Benicàssim (lo he dicho en ocasiones anteriores) es un paraíso gastronómico. El pueblo y la zona costera ofrecen una oferta gastronómica que combina lugares con esencia mediterránea y producto local de primera con atrevidos restaurantes de innovación y sabores traídos de otros lugares.

Además, el número de estudiantes y graduados en las Escuelas de Gastronomía de Castelló o Valencia constatan el buen momento que pasa “lo del comer” en la zona.

Es el caso de Jorge Lengua Álvaro, el Chef de La Suculenta que, junto a su socio Jaume Tárrega, decidió abrir este restaurante, en el que la comida o la cena se alargan con las copas en los bajos del mismo local, en La Tremenda Benicassim.

Pasó por las cocinas de Ángel León o Ricard Camarena a antes de embarcarse en esta, su primera aventura en solitario. Y lo hace con ganas, con esa fuerza de los jóvenes que saben que tienen mucho que contar y lo plasman en la actualización y renovación de platos y productos más tradicionales en propuestas que gustan y sorprenden

“Saborea lo inesperado” reza su eslogan. Y resume bien lo que ocurre la croqueta de rabo de toro con kimchi y parmesano, excelentemente trabajada en el crujiente y cremoso, o el saam de gallineta frita (similar al cabracho) que proponen dos bocados llenos de sabor y originalidad para empezar el ágape.

El plato estrella llega en forma de “carbonara reversionada”… unas gulas de tierra al ajillo con yema de huevo. Servidos en cazuela, las setas conocidas como enoki o lutescens amalgaman en un sofrito de ajo que emulsiona en mesa con tres yemas de huevo atemperadas….el resultado es un plato delicioso, contundente y que ofrece un bocado crujiente y sabroso que hará las delicias de muchos. La careta de cerdo crujiente con Módena y queso feta convence y completa. Con 2 o 3 platillos se cena muy bien en este lugar.

Más flojitos los postres, que no convencen en el desdibujado petit suisse de fresas silvestres con cremoso de chocolate blanco o la tarta de queso, que por sí sola gusta pero no requiere más ingredientes: en mi opinión la mermelada y la tierra sobran.

Ambiente distendido, buen servicio (mejoraría si cambiaran los platos y cubiertos tras cada plato, se echa en falta…) y cocina que promete. Menús a 35€ y propuestas de arroces y paellas que dejamos para el próximo verano cuando, seguro, volveremos a constatar la evolución de este joven chef.

As summer tradition dictates, we like to check out and discover all the new spots and restaurants in the areas where we spend our holidays. Benicassim (as I’ve mentioned on previous occasions) is a gastronomic paradise. The town and the coastal area have a culinary offering that combines places featuring a Mediterranean essence and top-quality local products with bold and innovative restaurants that bring in flavors from other destinations.

What’s more, the large number of students and graduates of the Culinary Schools of Castellón and Valencia confirm that it’s a good time for dining out in the region.

That’s the case with Jorge Lengua Alvaro, the chef of La Suculenta who, together with his partner Jaume Tárrega, decided to open this restaurant, where lunches and dinners extend into cocktails downstairs at La Tremenda .

He spent time in the kitchens of Ángel León and Ricard Camarena before embarking on this, his first solo venture. And he does so with enthusiasm, and with that strength of youth that knows it has a lot to say and expresses it through the updating and revamping of more traditional dishes and products into results that delight and surprise.

“Taste the unexpected” is its slogan. And that is a good summary of what happens with the oxtail croquette with kimchi and parmesan, with perfectly executed crunch and creaminess, and the ssam of fried bluemouth rockfish (similar to red scorpionfish): two bites bursting with flavor and originality to start the feast.

The signature dish arrives in the form of “remixed carbonara”: yellow foot mushrooms cooked in garlic with egg yolk. It is served in a casserole, with the mushrooms mixed in a garlic sofrito that is emulsified at the table with three warmed egg yolks. The result is a hearty and delicious dish with a crunchy and flavorful bite that is sure to be a popular sensation. The crunchy pig’s snout with balsamic and feta is an impressive finishing touch. With two or three small plates you can dine very well here.

The desserts are somewhat weaker and I was unimpressed by the unstructured Petit Suisse with wild strawberries and white chocolate cream, which is good on its own but does not need more ingredients; in my opinion the jam and the crumble are unnecessary.

The restaurant has a casual atmosphere, good service (it would be even better if they would replace the dishes and flatware after each dish, it’s sorely needed…) and promising cuisine. There are prix fixe menus for €35 and rice and paella dishes that we left for next summer, when we will certainly return to check on the evolution of this young chef.
