Diverxo, Madrid. Y una vez más me rendí… A sus pies. A su grandeza y a su genialidad. Pocas veces convergen tantas buenas sensaciones en un sólo ágape. Sin fisuras, sin opción al error, sin margen para el tanteo… Está en su mejor momento, sin duda. Y ya ha entrado por la puerta grande en el terreno sólo reservado para los mejores, los que harán historia…

Dabiz Muñoz es un genio. Sé que mi afirmación y post traerán cola. Los hay defensores y los hay detractores. Y, en su caso, por la singularidad de su físico, su mediático matrimonio o su peculiar verborrea, muchos más de los segundos que de los primeros… Pero no puedo dejar de transmitir todo lo que me provoca cada visita a su restaurante… Pasión, emoción, ternura, sorpresa, comprensión, aprendizaje, culturas, vida….

En esta ocasión, su un extensísimo menú (casi imposible terminarlo) permite viajar alrededor del mundo y constatar que pocas cocinas hay en España que te transporten a tantos puntos diferentes del mapa: Mexico, Perú, Japón, China, India, Singapur…desde tu silla. Y consigue aunar esos puntos de picantes, de chiles, de salsas y de condimentos con castizas cocciones como los sorprendentes callos con tortilla o las numerosas variedades de tacos o dim sums que presenta en un «juego chino» único.

Ameniza el recorrido con vajilla nunca vista (¡es tan importante el fondo como la forma!), propuestas sugerentes y divertidas para degustar sus platos (véase el video de CARLOS comiendo un flan como en su más tierna infancia) y toques de originalidad y hasta excentricidad únicos.

No hay restaurante en España dónde poder mojar los dedos en la salsa, chuparlos y rebañar el plato sin ser mal visto. Dónde iniciar el recorrido en solitario, en la penumbra de cortinas y candelabros y terminarlo envuelto en los rosas chicles y blancos inmaculados de la decoración de su sala, la más divertida de cuantas hayamos visitado. Dónde no tener un segundo para la distracción… todo en Diverxo es digno de repasar, de recordar y de ser revisitado. Ni las fotos le hacen justicia…

4 horas de evasión, de no querer volver, de no saber si diluviará o se habrá parado el tiempo tras la puerta…

Además, es irrisoriamente joven… Lo conocí hace más de 10 años cuando tras insistir sin parar logré conseguir una mesa (tras meses intentándolo) en el antiguo emplazamiento de la Calle Pensamiento, cuando algunos ya empezaban a apuntar que se convertiría en un imprescindible…Se lo quise regalar a Carlos tras una de sus primeras actuaciones en Madrid en una de nuestras primeras giras teatrales… Insistimos en verle tras la cena y le saludamos por primera vez. Con unos cuantos kilos de más y arrancando su brillante carrera tras aquel mostrador en la cocina, su buen hacer presagiaba ya su futuro…Nos enamoró su cocina…. Dicen que ningún otro arrendatario ha alquilado ese local, que en 2013 vio cómo le otorgaban las 3 estrellas Michelin…

Está en su mejor momento. Molestará a muchos e inquietará a otros. Pero haber sido testigos de su evolución nos enorgullece. Porque, además, no falta ni a uno sólo de los servicios que ofrece, ¡ni a uno!. Un grande siempre lo demuestra con detalles pequeños… o más grandes si cabe…

¡Bravo Dabiz! Toda nuestra admiración y agradecimiento. Estás en tu mejor momento.

Diverxo, Madrid. And once again I surrender myself… At his feet. At his greatness and genius. It is not often that so many amazing sensations come together in one meal. Seamless, without room for error, without margin for guesswork… There is no doubt that he is in his finest moment. And he entered the sphere reserved for the very best in his craft through the big door; the one for those who will make history…

Dabiz Muñoz is a genius. I know that this affirmation and will spark debate. He has his fans and his haters. And in his case, thanks to his unique physical appearance, his media-hyped marriage and his peculiar verbosity, there are many more in the second group than the first… But I can’t help attempting to transmit everything that he inspires in me each time I visit his restaurant… Passion, emotion, tenderness, surprise, understanding, learning, cultures, life…

On this occasion, his incredibly extensive tasting menu (almost impossible to finish) makes it possible to journey around the world and confirm that there are few kitchens in Spain that can transport you to as many different points on the map – Mexico, Peru, Japan, China, India, Singapore, etc. – from the comfort of your chair. And he manages to bring together those spicy touches, of chilies, of sauces and condiments with traditional cooking preparations like the surprising tripe with tortilla, or the numerous varieties of tacos or dim sum that he offers up in a unique “Chinese game.”

The journey is further enlivened by never-before-seen tableware (the bottom of the dish is as important as the shape), suggestive and fun propositions for tasting his creations (see the video of CARLOS eating a flan like when he was a little boy) and original touches that at times reach heights of unique eccentricity.

There is not another restaurant in Spain where one can dip their fingers in the sauce, suck on them and then wipe up the dish without being looked at askance. Where to begin this solitary journey? In the shadow of curtains and candelabras, and finish wrapped in the immaculate bubblegum pinks and whites of the decor of his dining room – the most delightful one that we have ever seen. Where you can’t afford even a second of distraction?

Everything in Diverxo is worthy of remembering, and going over again and again. The photos can’t come close to doing it justice… Four hours of evasion, of not wanting to come out of it, of not knowing if it will start pouring rain, or if time will stop outside the door…

Furthermore, he is ridiculously young… I met him more than 10 years ago when, after insisting over and over for months, I finally managed to get a table in the restaurant’s former location on Calle Pensamiento, when some were already calling it a must-visit.

I wanted to invite Carlos to dinner here after one of his first performances in Madrid, on one of our first theatrical tours… We insisted on seeing the chef after dinner and met him for the first time. More than a few pounds heavier and starting his new career behind that kitchen counter, his culinary mastery was already an indication of his future… We fell in love with his cuisine… They say that no one else has rented that space, which in 2013 was witness to the reception of his 3rdMichelin Star….

He is at his finest right now. He might bother a lot of people and discomfort others, but we are proud of having witnessed his evolution. Because, what’s more, he doesn’t miss a single one of the meal services, not one! The greats always demonstrate their greatness through small details… or even greater ones if possible… Bravo Dabiz! You have all our admiration and gratitude. You are at your peak.
